Takeru, could you introduce yourself in a few words?
My name is Takeru Fukuchi. I am Japanese, originally from Fukushima Prefecture.
My family owns a wagashi shop specializing in tempura manju.
Pleased to meet you.
You're the assistant wagashi chef, but also a bit of a "Swiss Army knife" at ThéRâPie. How would you describe your role on a daily basis?
I work with the mindset of being able to travel and move around everywhere, like in Luxembourg where you can easily reach any country.
You are often nicknamed the "Matcha Man" of the house… what is your connection with matcha?
A wagashi craftsman, like a samurai, cannot afford to ignore matcha, which is like the shogun.
At home, I drank so much matcha that even my work clothes took on its green color.
What do you appreciate most about wagashi work?
I don't just make wagashi. I take care of the tools, I think about the history of this art. When creating wagashi, I remember Japan and I feel like I'm with my family.
I always prepare them with all my heart.
Is there a wagashi or creation that you particularly enjoy making?
Matsukaze (because you can give it a taste)
Being the only man on the team — how do you feel about that? 😉
I am happy because I feel like I now have many kind older sisters.
What made you want to join the ThéRâPie adventure?
Because Samira, who sometimes seems more Japanese than the Japanese themselves, amused and intrigued me greatly.
What is your favorite moment at ThéRâPie?
The smiles of the customers.
If ThéRâPie were a person, how would you describe her?
Mischievous / a little rowdy.
Is there a detail you always pay close attention to, even if customers don't notice it?
Simply doing what is natural in Japan.
What would you like customers to feel when tasting a wagashi or matcha prepared by you?
I would like people to take an interest, even just a little, in Japanese culture.
