Shojin Ryōri (精進料理) is a vegetarian cuisine that has been practiced for centuries in Japanese Buddhist temples. Derived from Zen philosophy, it embodies harmony, simplicity, and respect for nature.

Shabu-Shabu

Shabu-shabu (しゃぶしゃぶ) is a refined Japanese fondue where thin slices of wagyu beef or fresh fish are delicately immersed for a few seconds in a fragrant broth (kombu dashi).

Gyūdon

(lunch & dinner)

Gyūdon – 牛丼 Sliced A5 Wagyu slow-cooked with sweet onions in a refined broth, served over Japanese Koshihikari rice. This classic of Japanese cuisine is revisited here in an elegant version, where the tenderness of the meat and the umami depth of the broth harmonize in perfect simplicity.
